Cookie Monster Cheesecake
(Serves 10-12, 9-inch Springform)
Oreo Crust
- 300g Oreo Cookies (with filling), finely crushed
- 100g Unsalted Butter, melted
Combine and press into prepared Springform pan. Chill for 20 min.
Cookie Monster Cheesecake Filling
- 600g Full-fat Cream Cheese, softened
- 150g Caster Sugar
- 3 Large Eggs
- 200ml Sour Cream
- 1 tsp Vanilla Extract
- 150g Oreo Cookies, chopped
- A few drops blue food colouring (optional, for fun)
Preheat oven to 160°C using a water bath.
Beat cream cheese and caster sugar until smooth. Beat in eggs one at a time, followed by sour cream and vanilla. Fold in chopped Oreos and a few drops blue colouring, if using. Pour mixture into prepared crust and bake for 55-65 min or until set with a jiggle in the centre. Let it cool slowly in the oven with the door ajar for 1 hour. Chill for 6 hours or overnight.
Topping
- 100g Oreo Cookies, crushed
- Whipped Cream (optional)
Unmold, top with crushed Oreos and whipped cream eyes with black icing for Cookie Monster’s face. Chill until ready to serve and enjoy!
