CHOCOLATE GANACHE LOAF CAKE
Ingredients
- For the chocolate loaf
- All-purpose flour – 1½ cups (190g)
- Cocoa powder – ½ cup (50g)
- Baking powder – 1 teaspoon
- Baking soda – ½ teaspoon
- Salt – ¼ teaspoon
- Unsalted butter – ½ cup (113g)
- Granulated sugar – ¾ cup (150g)
- Brown sugar – ¼ cup (50g)
- Eggs – 2 large
- Vanilla extract – 1 teaspoon
- Milk – ¾ cup (180ml)
- Hot water or hot coffee – ½ cup (120ml)
- For the chocolate ganache
- Dark or milk chocolate – 1 cup (180g)
- Fresh cream (whipping cream) – ½ cup (120ml)
- Butter – 1 tablespoon (14g)
Instructions
Grease and line a loaf pan with parchment paper. Preheat the oven to 170°C (340°F).
Sift together the flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
Cream the butter, granulated sugar, and brown sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
Add the dry ingredients in two parts, alternating with the milk. Mix gently until just combined. Pour in the hot water or coffee and mix lightly; the batter will be thin.
Pour the batter into the prepared loaf pan and bake for 45–55 minutes, or until a skewer inserted in the center comes out clean. Allow the cake to cool completely.
For the ganache, heat the cream until just hot (do not boil). Pour it over the chopped chocolate and butter. Let it sit for 2 minutes, then stir until smooth and glossy.
Pour or spread the ganache over the cooled loaf cake. Let it set at room temperature or refrigerate briefly for a firmer finish.
