Black Forest Roll Cake
Ingredients:
For the Chocolate Sponge Cake:
• 4 large eggs
• ¾ cup granulated sugar
• 1 tsp vanilla extract
• ½ cup all-purpose flour
• ¼ cup cocoa powder
• ½ tsp baking powder
• Pinch of salt
For the Filling:
• 1 ½ cups heavy whipping cream
• ¼ cup powdered sugar
• 1 tsp vanilla extract
For the Ganache:
• 1 cup dark chocolate, chopped
• ½ cup heavy cream
For Garnish:
• Whipped cream swirls
• Fresh cherries
• Grated chocolate
Instructions:
Prepare the Sponge Cake:
1. Preheat your oven to 350°F (175°C). Line a 10x15-inch jelly roll pan with parchment paper.
2. Beat the eggs and sugar together until pale and thick. Stir in the vanilla extract.
3. Sift together the flour, cocoa powder, baking powder, and salt. Gradually fold this mixture into the egg mixture until smooth.
4. Spread the batter evenly in the prepared pan. Bake for 10-12 minutes or until the top springs back when lightly touched.
5. Immediately after baking, roll the warm cake (with the parchment paper still inside) into a log shape. Let it cool completely.
Prepare the Filling:
1. Whip the heavy cream, powdered sugar, and vanilla extract together until stiff peaks form.
2. Unroll the cooled cake, spread a layer of whipped cream evenly, then roll it back up tightly. Chill the cake for at least 1 hour.
Prepare the Ganache:
1. Heat the cream until steaming (do not boil), then pour it over the chopped chocolate. Let it sit for 2 minutes, then stir until smooth.
2. Let the ganache cool slightly, then spread it over the rolled cake.
Decorate:
1. Slice the roll into segments and arrange them in a circle to form a wreath shape.
2. Add whipped cream swirls on each segment, top with fresh cherries, and sprinkle grated chocolate for an elegant finish.
Decoration Tips:
• For a snowy effect, add a dusting of powdered sugar.
• You can enhance the festive look with sprigs of fresh rosemary or pine.
• Serve with cherry compote for an extra burst of flavor.
