Baked Strawberry Cake Donuts

Ingredients:

  • For the donuts:

  • 1 cup fresh strawberries, finely chopped
  • 2 tablespoons strawberry jam (optional, for extra flavor)
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup granulated sugar
  • 2 large eggs
  • ½ cup milk
  • ¼ cup plain yogurt or sour cream
  • ¼ cup vegetable oil (or melted butter)
  • 1 teaspoon vanilla extract

  • For the glaze (optional):

  • 1 cup powdered sugar
  • 2–3 tablespoons milk or strawberry puree
  • ½ teaspoon vanilla extract

Instructions:

Preheat oven to 350°F (175°C). Lightly grease a donut pan.

In a bowl, whisk together flour, baking powder, baking soda, and salt.

In another bowl, beat sugar and eggs until light and creamy.

Add milk, yogurt, oil, and vanilla. Mix well.

Gently fold in the chopped strawberries (and jam if using).

Gradually add the dry ingredients to the wet mixture. Mix until just combined (do not overmix).

Spoon or pipe the batter into the donut pan, filling each cavity about ¾ full.

Bake for 15–18 minutes or until a toothpick inserted comes out clean.

Let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

For the glaze:

Mix powdered sugar with milk or strawberry puree until smooth. Dip cooled donuts into the glaze and let set before serving.
