Red Velvet Cake with Cream Cheese Frosting

  • Makes a tall 2-layer cake.

Ingredients

  • 2½ cups all-purpose flour
  • 1½ cups sugar
  • 1 teaspoon baking soda
  • 1 teaspoon cocoa powder
  • 1 teaspoon salt
  • 2 large eggs
  • 1½ cups vegetable oil
  • 1 cup buttermilk (or milk + 1 tbsp vinegar)
  • 1 tablespoon red food coloring (gel or liquid)
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar

Preparation

Preheat the oven to 180°C / 350°F.

Grease and flour the pan.

In a bowl, mix flour, sugar, baking soda, cocoa, and salt.

In another bowl, mix eggs, oil, buttermilk, food coloring, and vanilla.

Add the wet ingredients to the dry ones and mix just until combined (do not overmix).

Add the vinegar and gently mix.

Pour the batter into the pan.

Bake for 45–50 minutes, or until a toothpick comes out clean.

Let cool completely.

Slice the cake horizontally into 2 layers.
