Madeira Cake Recipe

Ingredients

  • 125 g margarine (½ cup), softened
  • 1 cup icing sugar
  • 2 eggs
  • 1 tsp vanilla essence
  • 1½ cups self-raising flour
  • ½ cup milk

Method

Preheat oven to 170°C (340°F). Grease and line a loaf tin.

Cream margarine and sugar together until pale, smooth, and fluffy.

Add eggs one by one, beating well after each addition.

Stir in the vanilla essence.

Fold in flour gently, alternating with the milk until smooth.

👉 Do not overmix.

Pour into the tin and smooth the top.

Bake for 45–55 minutes, or until a skewer comes out clean.

Let cool 10 minutes in the tin, then transfer to a rack.
