Ingredients – Cake:

• 2 cups all-purpose flour

• 2 cups sugar

• 1 tsp baking soda

• ½ tsp salt

• 2 eggs

• ½ cup butter, melted

• ½ cup vegetable oil

• 1 cup buttermilk

• 1 tsp vanilla extract

• 1 cup sweetened shredded coconut

• 1 cup chopped pecans

Ingredients – Cream Cheese Frosting:

• 8 oz cream cheese, softened

• ½ cup butter, softened

• 3½ cups powdered sugar

• 1 tsp vanilla extract

• Extra coconut & pecans for topping

🥣 How to Make It

1️⃣ Preheat oven to 175°C / 350°F. Grease a 9×13-inch sheet pan.

2️⃣ In a large bowl, mix flour, sugar, baking soda, and salt.

3️⃣ Add eggs, melted butter, oil, buttermilk, and vanilla. Mix until smooth.

4️⃣ Fold in coconut and pecans.

5️⃣ Pour batter into pan and bake 30–35 minutes until a toothpick comes out clean.

6️⃣ Beat frosting ingredients until fluffy and creamy.

7️⃣ Spread frosting over cooled cake. Sprinkle with coconut and pecans.
