  • ​1/2 tsp Baking powder
  • ​1/2 tsp Salt
  • ​150g Butter, softened
  • ​150g Brown sugar
  • ​1 Egg
  • ​1 tsp Vanilla extract

  • ​Optional: 

  • Chocolate chips or chopped nuts

​Instructions

​Prep: Preheat your oven to 180°C (350°F).
​Dry Ingredients: In a bowl, whisk together the flour, baking powder, and salt.
​Creaming: In a separate large bowl, cream the softened butter and brown sugar together until smooth and fluffy.
​Wet Ingredients: Beat in the egg and vanilla extract until well combined.
​Combine: Gradually stir the dry flour mixture into the wet ingredients until a smooth dough forms.
​Add-ins: Fold in the chocolate chips or nuts, if using.
​Shape: Line a baking sheet with parchment paper. Scoop rounded tablespoons of dough and place them on the sheet, leaving space between each.
​Flatten: Lightly press down on each ball with a fork.
​Bake: Bake for 10 to 12 minutes, or until the edges are just beginning to turn golden brown.
​Cool: Let the cookies rest on the baking sheet for 5 minutes before moving them to a wire rack to cool completely.
​Variations
​Nutty: Add macadamia nuts or pecans for extra crunch.
​White Chocolate: Swap the dark chocolate chips for white chocolate.
​Oatmeal: Stir in 50g of rolled oats for a chewier, heartier texture.
​Spiced: Add a pinch of cinnamon or nutmeg for a warm, spiced flavor.
​Pro Tip: For a "bakery-style" finish, sprinkle a tiny pinch of sea salt on top right after they come out of the oven!
