Chocolate Valentine’s Day Cheesecake
Ingredients
For the base
• 1.5 cups chocolate cookie crumbs
• 1/3 cup melted butter
Chocolate Cheesecake Filling
• 680 g cream cheese (at room temperature)
• 1 cup granulated sugar
• 3 eggs (at room temperature)
• 3/4 cup heavy cream or strained yogurt
• 225 g dark or semi-sweet chocolate (melted, cooled)
• 2 tablespoons cocoa powder
• 1 teaspoon vanilla extract
• 1/4 teaspoon salt
Instructions
1. Preheat the oven to 160°C.
Line the bottom of a 22–23 cm springform pan with parchment paper.
2. Base:
Mix the cookies and butter.
Press into the bottom of the pan.
Bake at 180°C for 10 minutes, then remove.
3. Filling:
Beat the cream cheese until smooth.
Add the sugar and mix briefly.
Add the cream, vanilla, cocoa, and salt.
Add the eggs one at a time on low speed.
Finally, add the melted chocolate and mix.
4. Baking:
Pour the mixture over the base.
Tap the pan lightly on the counter.
Bake for 50–60 minutes.
(The center should jiggle slightly.)
5. Cooling:
Turn off the oven and leave the door slightly open.
Let the cheesecake cool in the oven for 1 hour.
Then refrigerate for at least 4 hours, preferably overnight.
