Chocolate Chip Banana Bread!
Ingredients
• 3 medium overripe bananas, mashed
• 2 large eggs, room temperature
• 50 g brown sugar
• 50 g white granulated sugar
• 115 g vegetable oil
• 125 g Greek yogurt or sour cream
• 1 teaspoon vanilla extract
• ¼ teaspoon sea salt
• 190 g plain (all-purpose) flour
• 1 teaspoon baking soda
• 1 teaspoon baking powder
• 100 g milk & dark chocolate chips
• 50 g chocolate chunks or extra chips, for topping
Instructions
Preheat your oven to 180°C (350°F). Line a 9 x 5 inch loaf pan with parchment paper, leaving some overhang for easy removal.
In a large bowl, mash the overripe bananas with a fork until mostly smooth.
Add the eggs, brown sugar, and white sugar to the mashed bananas. Whisk until the mixture looks smooth and slightly pale.
Pour in the vegetable oil and add the Greek yogurt (or sour cream). Mix well until fully combined.
Stir in the vanilla extract and sea salt.
Sift together the flour, baking soda, and baking powder.
Gently fold with a spatula until just combined.
Fold in the milk and dark chocolate chips evenly through the batter.
Pour the batter into the prepared loaf pan. Smooth the top, then sprinkle the 50 g chocolate chunks/chips evenly over the surface.
Bake for 50–55 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
Let the banana bread cool in the pan for 10–15 minutes, then lift it out and transfer to a wire rack to cool completely before slicing.
