Cheesecake with the smooth kick

Combining the rich flavors of a classic cheesecake with the smooth kick of Bailey’s Irish Cream, this dessert is a sophisticated treat for any occasion.

  • ​15 Oreo Cookies
  • ​4 Tbsp unsalted butter

  • ​The Filling

  • ​11 oz white chocolate chips
  • ​2 packages cream cheese (softened)
  • ​¾ cup granulated sugar
  • ​1 Tbsp cornstarch
  • ​1 ¼ cups heavy whipping cream
  • ​¼ cup Bailey’s Irish Cream
  • ​1 Tbsp strong brewed coffee
  • ​1 cup sour cream
  • ​2 tsp vanilla extract
  • ​3 large eggs

  • ​The Ganache

  • ​6 oz dark chocolate chips
  • ​½ cup heavy whipping cream

  • ​Espresso Whipped Cream Top

  • ​½ cup heavy whipping cream
  • ​2 Tbsp powdered sugar
  • ​1 tsp espresso powder
  • ​¼ cup dark chocolate espresso beans (for garnish)

​Instructions

​Prepare the Base: Pulse the Oreos in a food processor until fine, mix with melted butter, and press into your pan.

​Mix the Filling: Melt the white chocolate chips with the Bailey's, coffee, and a splash of the cream. In a large bowl, cream together the cream cheese, sugar, and cornstarch. Gradually add the remaining filling ingredients, finishing with the eggs one at a time.

​Bake and Cool: Pour over the crust and bake until the edges are firm. Let it cool slowly to prevent cracking, then chill in the fridge for several hours.

​Top it Off: Melt the ganache ingredients together and pour over the chilled cake. Once set, whip the cream with espresso powder and sugar to pipe decorations on top, finishing with the espresso beans.
