Soft Potato Buns

Ingredients

  • Warm milk ½ cup (120ml)
  • Active dry yeast 2 tsp
  • Sugar 3 tbsp
  • Mashed potatoes 1 cup (about 200g; plain, no butter)
  • Butter 4 tbsp (57g), softened
  • Egg 1 large
  • Flour 3 cups (375g; using your conversion)
  • Salt 1 tsp

  • For brushing:

  • 1 egg yolk + 1 tbsp milk

Instructions

Mix warm milk, yeast, and 1 tbsp of the sugar in a bowl and let it proof until frothy.

Combine mashed potatoes, butter, remaining sugar, egg, and salt in a mixing bowl until smooth.

Add the proofed yeast mixture and mix.

Add the flour gently and mix until a soft dough forms.

Knead until smooth and stretchy, about 8–10 minutes.

Cover and let it rise until doubled in size.

Punch down and divide into buns. Shape into smooth balls.

Arrange on a tray, cover, and allow the second rise until puffy.

Brush with egg wash.

Bake at 350°F (175°C) for 18–20 minutes, until golden.

Cool on a rack.
