Marble Muffins
Ingredients (12 muffins)
Vanilla Batter
• 1 cup (125g) all-purpose flour
• ½ cup (100g) sugar
• 1 tsp baking powder
• ¼ tsp salt
• 1 large egg (room temp)
• ½ cup (120ml) milk
• ⅓ cup (80ml) vegetable oil or melted butter
• 1 tsp vanilla extract
Chocolate Batter
• ¾ cup (95g) all-purpose flour
• ½ cup (100g) sugar
• 1 tsp baking powder
• ¼ tsp salt
• 1 large egg
• ½ cup (120ml) milk
• ⅓ cup (80ml) vegetable oil or melted butter
• ¼ cup (25g) cocoa powder
• 1 tsp vanilla extract
Instructions
Preheat your oven to 180°C (350°F) and line a muffin tray with paper liners.
In one bowl, whisk together the vanilla batter dry ingredients: flour, sugar, baking powder, and salt.
In another bowl, mix the egg, milk, oil, and vanilla, then combine with the dry ingredients to form the vanilla batter.
For the chocolate batter, mix the dry ingredients—flour, sugar, baking powder, salt, and cocoa powder—in a separate bowl.
Whisk the egg, milk, oil, and vanilla in another bowl, then mix into the chocolate dry mixture until smooth.
Spoon a little vanilla batter into each muffin cup, then add some chocolate batter.
Alternate both batters until cups are ¾ full.
Run a toothpick or skewer through each cup to create a marble swirl.
Bake for 18–20 minutes or until the tops are set and a toothpick comes out clean.
Allow the muffins to cool slightly before serving.
