📝 Ingredients

  • For the cake batter:

  • 3 large eggs (room temperature)
  • ¾ cup (150 g) granulated sugar
  • 1 tsp vanilla extract (or vanilla sugar)
  • ½ cup (120 ml) vegetable oil
  • (or ⅔ cup / 150 g melted butter)
  • ½ cup (120 ml) milk
  • 2 cups (250 g) all-purpose flour
  • 2 tsp baking powder (10 g)
  • ¼ tsp salt

  • For the swirl:

  • ¾ cup (200 g) red fruit jam
  • (cranberry, raspberry, strawberry, or cherry — slightly warmed)

  • Optional topping:

  • 2–3 tbsp jam
  • Slivered almonds or pearl sugar

👩‍🍳 Instructions

Preheat oven to 340°F (170°C).

Line or grease the loaf pan.

Whisk eggs, sugar, and vanilla until pale and fluffy.

Add oil, then milk, mixing gently.

Sift in flour, baking powder, and salt. Mix just until smooth.

Pour half the batter into the pan.

Spoon jam over the batter, then cover with remaining batter.

Create the swirl using a knife or skewer in gentle circular motions.

Add extra jam on top and lightly swirl.

Bake for 45–50 minutes, until a toothpick comes out clean.

Cool 10 minutes, then remove and cool completely on a rack.

🌟 Tips

If jam is too runny, mix it with 1 tsp cornstarch.

Works beautifully with lemon curd or chocolate spread.

Even better the next day.
