Delightful Cherry Cake

Ingredients:

  • For the Cake:

  • 1 box white cake mix
  • 3 large eggs
  • 1/3 cup vegetable oil
  • 1/2 cup water
  • 1 (21 oz) can cherry pie filling
  • 1 teaspoon almond extract

  • For the Frosting:

  • 8 ounces cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup maraschino cherry juice
  • Maraschino cherries, for garnish

Directions:

Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan.

In a large bowl, combine the cake mix, eggs, vegetable oil, and water. Mix until well combined.

Gently fold in the cherry pie filling and almond extract until evenly distributed.

Pour the batter into the prepared pan and spread it out evenly.

Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool completely in the pan.

For the frosting, beat the cream cheese and butter together in a large bowl until smooth. Gradually add the powdered sugar, one cup at a time, mixing well after each addition.

Add the vanilla extract and maraschino cherry juice, and beat until the frosting is light and fluffy.

Spread the frosting evenly over the cooled cake. Garnish with maraschino cherries.

Slice and serve.
