Chocolate Loaf Cake

Ingredients:

 • 1¾ cups all-purpose flour

 • ¾ cup cocoa powder

 • 1½ cups sugar

 • 1½ tsp baking powder

 • 1½ tsp baking soda

 • 1 tsp salt

 • 2 eggs

 • 1 cup whole milk

 • ½ cup vegetable oil

 • 2 tsp vanilla extract

 • 1 cup boiling water

Instructions:

Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.

Mix all the dry ingredients (flour, cocoa, sugar, baking powder, baking soda, salt) in a large bowl. Add eggs, milk, oil, and vanilla. Beat for 2 minutes on medium speed. Stir in the boiling water—the batter will be thin, but that’s normal.

Pour into your prepared pan and bake for 60-70 minutes, or until a toothpick inserted in the center comes out clean. Let it cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
