Black Forest Cake

🔹 Ingredients

  • Chocolate Sponge

  • 5 eggs
  • 150 g sugar
  • 1 sachet vanilla sugar
  • 120 g flour
  • 30 g cocoa powder (unsweetened)
  • 1 tsp baking powder
  • Pinch of salt

  • Cherry Filling

  • 400 g cherries (fresh or canned, pitted)
  • 80 g sugar
  • 1 tbsp cornstarch
  • 100 ml cherry juice (from canned cherries or water)

  • Whipped Cream

  • 600 ml cold whipping cream (30–35% fat)
  • 80 g powdered sugar
  • 1 tsp vanilla extract
  • Soaking Syrup
  • 120 ml cherry juice or light sugar syrup
  • (optional: a few drops of cherry flavor — no alcohol needed)

  • Decoration

  • Extra whipped cream
  • Whole cherries
  • Chocolate shavings (optional)

🔹 Preparation

1️⃣ Chocolate Sponge

Preheat oven to 170°C. Line a 22–24 cm round pan.

Beat eggs, sugar, and vanilla until pale and fluffy.

Sift flour, cocoa, baking powder, and salt together.

Gently fold dry ingredients into the egg mixture.

Pour into pan and bake 30–35 minutes.

Let cool completely, then slice into 3 layers.

2️⃣ Cherry Filling

Cook cherries with sugar over medium heat.

Mix cornstarch with cherry juice, add to cherries.

Cook until thickened.

Let cool completely.

3️⃣ Whipped Cream

Beat cold cream with powdered sugar and vanilla until firm.

Keep chilled.

4️⃣ Assembly

Place first cake layer on plate and brush with syrup.

Spread whipped cream, then a thin layer of cherries.

Add second layer, repeat.

Top with final layer and cover entire cake with cream.

5️⃣ Decoration

Pipe whipped cream on top.

Add cherries and chocolate shavings.

Chill at least 4 hours before slicing.

🌟 Tips

For extra softness, don’t overbake the sponge.

Chill bowl and beaters for perfect whipped cream.

The cake tastes even better the next day!
