Vegan Chocolate Mousse Cake

Ingredients:

  • For the cake:

  • 200 g vegan chocolate cookies
  • 100 g melted coconut oil

  • For the mousse:

  • 300 g silken tofu
  • 200 g vegan dark chocolate, melted
  • 3 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • Pinch of salt

  • For decoration (optional):

  • Fresh berries
  • Vegan whipped cream
  • Chocolate shavings

Directions:

Start by preparing the cake base. Crush the vegan chocolate cookies into fine crumbs using a food processor or by placing them in a zip-top bag and crushing them with a rolling pin.

Transfer the cookie crumbs into a mixing bowl and stir in melted coconut oil until well combined.

Press the mixture firmly into the bottom of a springform pan to form the cake base. Chill in the refrigerator while preparing the mousse.

In a blender or food processor, combine silken tofu, melted vegan dark chocolate, maple syrup, vanilla extract, and a pinch of salt. Blend until smooth and creamy.

Pour the chocolate mousse mixture over the chilled cake base, spreading it out evenly with a spatula.

Cover the cake with plastic wrap and refrigerate for at least 4 hours, or until the mousse has set.

Once the mousse has set, carefully remove the cake from the springform pan and transfer it to a serving plate.

Decorate the cake with fresh berries, vegan whipped cream, and chocolate shavings, if desired.
