Red Velvet Strawberry Cheesecake 🍓❤️🍰
Ingredients
For the Red Velvet Cake Layers
• 2½ cups (315g) all-purpose flour
• 1½ cups (300g) sugar
• 1 cup (250ml) vegetable oil
• 1 cup (250ml) buttermilk
• 2 large eggs
• 2 tbsp cocoa powder
• 1 tsp baking soda
• 1 tsp white vinegar
• 1 tsp vanilla extract
• ½ tsp salt
• 1 tbsp red food coloring
For the Cheesecake Layer
• 2 (225g each) blocks cream cheese, softened
• ½ cup (100g) sugar
• 2 large eggs
• 1 tsp vanilla extract
• ½ cup (120ml) sour cream or yogurt
For the Strawberry Topping
• 1½ cups (250g) fresh or frozen strawberries, chopped
• 2 tbsp sugar
• 1 tsp cornstarch mixed with 1 tbsp water
• ½ tsp lemon juice
For the Frosting (Optional)
• 1 cup (250g) cream cheese, softened
• ½ cup (115g) butter, softened
• 3 cups (375g) powdered sugar
• 1 tsp vanilla extract
Instructions
Make the Cheesecake Layer
Preheat oven to 160°C (325°F). Line an 8-inch round pan with parchment paper.
Beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in sour cream and vanilla.
Pour batter into the pan and bake for about 35–40 minutes, until set but slightly jiggly in the center.
Cool completely and chill in the fridge while preparing the red velvet layers.
Make the Red Velvet Layers
Preheat oven to 175°C (350°F). Grease and line two 8-inch round pans.
In a large bowl, whisk together flour, cocoa powder, baking soda, and salt.
In another bowl, mix sugar, oil, buttermilk, eggs, vanilla, vinegar, and red food coloring.
Combine wet and dry ingredients until smooth.
Divide batter evenly into prepared pans and bake for 25–30 minutes or until a toothpick inserted comes out clean.
Cool completely.
Make the Strawberry Topping
In a saucepan, combine strawberries, sugar, and lemon juice. Cook over medium heat until the berries release their juice. Stir in cornstarch mixture and cook until thickened and glossy. Cool completely.
Assemble the Cake
Place one red velvet layer on a cake board.
Spread a thin layer of frosting or strawberry filling, then place the chilled cheesecake layer on top.
Add a bit more filling, then top with the second red velvet layer.
Frost the entire cake with cream cheese frosting, then spoon the strawberry topping over the top, letting it drip slightly down the sides.
