Luxurious Cherry Mousse Cheesecake

Ingredients:

  • For the Crust:

  • 2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 1/4 cup granulated sugar

  • For the Cream Cheese Layer:

  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs

  • For the Cherry Mousse:

  • 2 cups cherry puree
  • 1/2 cup powdered sugar
  • 2 cups heavy cream, chilled
  • 1 tablespoon gelatin
  • 1/4 cup cold water

  • For the Topping:

  • 1 cup fresh cherries, pitted
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice

Directions:

Preheat your oven to 325°F (160°C).

Crust:

In a medium bowl, mix the graham cracker crumbs, melted butter, and granulated sugar until well combined. Press the mixture into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then set aside to cool.

Cream Cheese Layer:

In a large bowl, beat the cream cheese and granulated sugar until smooth and creamy.

Add the vanilla extract and eggs, one at a time, beating well after each addition.

Pour the cream cheese mixture over the prepared crust and smooth the top.

Bake in the preheated oven for 60-70 minutes, or until the center is set and the edges are lightly browned. Allow the cheesecake to cool completely in the pan on a wire rack.

Cherry Mousse:

In a small bowl, sprinkle the gelatin over the cold water and let it bloom for 5 minutes. Then, heat gently until the gelatin is dissolved.

In a large bowl, mix the cherry puree and powdered sugar. Gradually add the dissolved gelatin.

In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cherry mixture.

Spread the cherry mousse evenly over the cooled cheesecake. Refrigerate for at least 4 hours or overnight.

Topping:

11. In a small saucepan, combine the fresh cherries, granulated sugar, and lemon juice. Cook over medium heat until the cherries release their juices and the mixture thickens, about 10 minutes. Let it cool completely.

Before serving, spread the cherry topping over the mousse layer.
