Incredibly Delicious Chocolate Peanut Butter Cake

Ingredients

For the Cake:

    • 1 ¾ cups (220g) flour

    • ¾ cup (75g) cocoa powder

    • 1 ½ teaspoons baking soda

    • 1 teaspoon baking powder

    • 1 ¾ cups (350g) granulated sugar

    • 1 pinch of salt

    • 2 eggs

    • 1 cup (240ml) buttermilk

    • ½ cup (120ml) vegetable oil

    • 1 cup (240ml) hot coffee (or hot water)

    • 1 teaspoon vanilla extract

Peanut Butter Cream:

     • 1 cup (230g) butter (at room temperature)

     • 1 ½ cups (300g) natural peanut butter

     • 2 ½ cups + 2 tablespoons (300g) powdered sugar

      • ⅓ cup (80ml) heavy cream

      • 1 teaspoon vanilla

Chocolate Ganache:

     • 100g dark chocolate

     • ½ cup (120ml) heavy cream

Preparation

1. Prepare the Cake

 1. Preheat the oven to 180°C.

2. Grease two 20 cm (8 inch) cake pans, line the bottoms with parchment paper, and sprinkle the sides with a little cocoa powder.

3. Mix the dry ingredients in a bowl: flour, cocoa powder, baking powder, baking soda, sugar, and salt.

 4. In a separate bowl, whisk together the eggs, buttermilk, vegetable oil, and vanilla.

5. Add the liquid mixture to the dry mixture and stir.

6. Finally, add the hot coffee and stir until smooth.

7. Divide the batter between the pans and bake for 30-35 minutes.

 8. Let cool completely.

2. Peanut Butter Cream

    1. Beat butter and peanut butter until creamy.

    2. Gradually add powdered sugar.

 3. Add the cream and vanilla and beat until light and fluffy.

3. Assembling the Cake

    1. Once the cake layers have cooled, trim the tops if necessary.

    2. Place the first cake layer on a plate and spread with peanut butter cream.

 3. Place the second layer on top and cover the entire outside of the cake with cream.

    4. Let it rest in the refrigerator for 2 hours.

4. Ganache

    1. Heat the cream (do not boil), pour it over the chopped chocolate.

 2. Wait 1-2 minutes and stir to prepare the ganache.

3. Pour over the cooled cake, allowing it to flow naturally.

Serving Suggestion

Garnish with nuts, chocolate chips, or mini peanut butter rosettes.

Best served cold. 🤎
