Blackberry Lavender Bliss Cake

Ingredients:

- 2 cups all-purpose flour  

- 3/4 cup unsweetened cocoa powder  

- 1 3/4 cups granulated sugar  

- 3/4 cup unsalted butter, softened  

- 1 cup buttermilk  

- 4 large eggs  

- 2 teaspoons vanilla extract  

- 2 teaspoons baking powder  

- 1/2 teaspoon salt  

- 2 cups blackberry compote (plus extra for tinting the batter)  

- 1 tablespoon dried lavender (plus extra for garnish)  

- 3 cups cream cheese frosting  

- 1/2 cup blackberry syrup (for drizzling)  

- Fresh blackberries (for garnish)  

Directions:

1. **Prepare the Cake Batter**  

   - Preheat the oven to 350°F (175°C) and grease three 9-inch round cake pans.  

   - Sift together flour, cocoa powder, baking powder, and salt. Set aside.  

   - In a mixing bowl, cream the butter and sugar until fluffy. Add eggs one at a time, then mix in vanilla extract.  

   - Alternate adding the dry ingredients and buttermilk, beginning and ending with the dry mix.  

2. **Tint the Batter**  

   - Blend a portion of the blackberry compote until smooth and strain to make a thick, rich blackberry puree. Mix this into the batter to achieve a deep chocolate hue, enhancing with food coloring if desired.  

3. **Bake the Cakes**  

   - Divide the batter evenly among the prepared pans, smoothing the tops. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.  

   - Let cakes cool in the pans for 10 minutes before transferring to a wire rack to cool completely.  

4. **Lavender-Infused Frosting**  

   - Steep dried lavender in a small amount of buttermilk. Mix this fragrant infusion into a portion of the cream cheese frosting for a floral, aromatic twist.  

5. **Assemble the Cake**  

   - Layer the first cake with blackberry-lavender cream. Add the second layer and repeat. Finish with the third layer and frost the entire cake with the remaining cream cheese frosting.  

6. **Finishing Touches**  

   - Drizzle blackberry syrup over the top, letting it cascade down the sides. Garnish with fresh blackberries and a light sprinkle of dried lavender.  

7. **Chill and Serve**  

   - Refrigerate the cake to set the frosting and allow the flavors to meld beautifully.
