Soft & Moist Lemon Loaf Cake Recipe
✅ Ingredients
- 1½ cups (190g) all-purpose flour
- 1 cup (200g) sugar
- 3 large eggs
- ½ cup (120ml) vegetable oil or melted butter
- ½ cup (120ml) milk
- 2 lemons (zest + juice)
- 2 tsp baking powder
- 1 tsp vanilla extract
- Pinch of salt
👩🍳 Instructions
1️⃣ Prepare Batter
Whisk eggs + sugar until light & creamy
Add oil (or melted butter), milk, vanilla, lemon juice & zest — mix well
Sift in flour, baking powder, salt
Mix gently until smooth
2️⃣ Bake
Pour into greased loaf pan
Bake at 170°C (340°F) for 40–50 minutes
(until golden and a toothpick comes out clean)
> Tip: If top gets dark too fast, cover loosely with foil for last 15 minutes.
🍋 Optional Lemon Syrup (for extra moist cake)
- 2 tbsp lemon juice
- 2 tbsp sugar
Heat until sugar melts, then brush over warm cake. SO moist

Let cool before slicing. Serve with tea or coffee ☕🍋
