Fluffy Chocolate & Caramel Doughnuts
🧈 Ingredients
- For the Doughnuts
- All-purpose flour – 3 ½ cups (440g)
- Warm milk – 1 cup (240ml)
- Granulated sugar – ¼ cup (50g)
- Instant yeast – 2 ¼ tsp (1 packet, 7g)
- Unsalted butter – ¼ cup (60g), softened
- Eggs – 2 large
- Salt – ½ tsp
- Vanilla extract – 1 tsp
- Oil – for frying
- For the Glazes
- 1. Milk Chocolate Glaze
- Milk chocolate – 150g
- Heavy cream – 2 tbsp
- Butter – 1 tsp
- 2. White Chocolate Glaze
- White chocolate – 150g
- Heavy cream – 2 tbsp
- Butter – 1 tsp
- 3. Caramel Glaze
- Soft caramels – 150g (or homemade caramel)
- Heavy cream – 3 tbsp
- Butter – 1 tbsp
- For Decoration
- Crushed roasted peanuts
- Crushed almonds or hazelnuts
- Crushed wafer or biscuit crumbs
- Melted white and dark chocolate for drizzling
👩🍳 Instructions
Step 1 – Make the Dough
1. In a bowl, mix warm milk, sugar, and yeast. Let it rest for 10 minutes until foamy.
2. Add eggs, butter, vanilla, and salt. Mix well.
3. Gradually add flour, mixing until a soft dough forms. Knead for 8–10 minutes until smooth and elastic.
4. Cover and let rise in a warm place for 1 hour, or until doubled in size.
Step 2 – Shape the Doughnuts
1. Roll out the dough to about ½ inch (1.2 cm) thick.
2. Cut out rounds with a doughnut cutter or two circular cutters (one large, one small).
3. Place them on parchment paper and let rise again for 30–45 minutes until puffy.
Step 3 – Fry
1. Heat oil in a pot to 170–180°C (340–350°F).
2. Fry 2–3 doughnuts at a time for 1–1½ minutes per side until golden brown.
3. Remove and drain on paper towels. Let cool completely before glazing.
Step 4 – Make the Glazes
For each glaze, melt the chocolate or caramel with cream and butter in a heatproof bowl over simmering water (or microwave in short bursts). Stir until smooth and glossy.
Step 5 – Decorate
1. Dip each doughnut into the glaze of your choice (milk chocolate, white chocolate, or caramel).
2. Sprinkle nuts or biscuit crumbs on top.
3. Drizzle with melted chocolate for a professional look.
4. Let the glaze set at room temperature for 15–20 minutes.
🍫 Tips
For extra shine, add 1 tsp of corn syrup or honey to each glaze.
Store in an airtight container at room temperature for up to 2 days.
