Chocolate Ganache Cake

Ingredients:

  • For the Cake:

  • 1¾ cups all-purpose flour
  • 2 cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 1½ teaspoons baking powder
  • 1½ teaspoons baking soda
  • 1 teaspoon salt
  • 1 teaspoon instant coffee powder
  • 1 cup buttermilk
  • ½ cup vegetable oil
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup boiling water

  • For the Ganache:

  • 1½ cups heavy cream
  • 18 oz semisweet chocolate, finely chopped
  • 2 tablespoons unsalted butter

Directions:

Preheat Oven:

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch cake pans and line with parchment paper.

Mix Dry Ingredients:

2. In a large bowl, whisk together flour, sugar, cocoa, baking powder, baking soda, salt, and coffee powder.

Add Wet Ingredients:

3. Add buttermilk, vegetable oil, eggs, and vanilla to the dry ingredients. Mix on medium speed until well combined.

Add Boiling Water:

4. Reduce speed and carefully add boiling water to the batter. Mix until well combined. The batter will be thin.

Bake:

5. Divide the batter evenly between the prepared pans. Bake for 30-35 minutes, until a toothpick inserted in the center comes out clean.

Cool:

6. Remove from the oven and let cool for about 10 minutes. Then remove from pans and cool completely on a wire rack.

Prepare Ganache:

7. Heat cream in a small saucepan until it begins to simmer. Pour over the chopped chocolate in a heat-proof bowl. Let sit for a minute, then stir until smooth. Add butter and mix until melted and combined. Cool to room temperature.

Assemble Cake:

8. Place one cake layer on your serving plate. Spread a layer of ganache over it. Place the second layer on top and frost the cake with the remaining ganache.

Garnish:

9. Optionally, decorate with chocolate shavings, fresh berries, or edible gold flakes for an elegant touch.
