White Chocolate Strawberry Cheesecake! 🍰

📝 Ingredients:

  • For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

  • For the Cheesecake Filling:

  • 12 oz cream cheese, softened
  • 1 cup white chocolate chips, melted
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1 cup fresh strawberries, pureed (about 1 cup of whole strawberries)

  • For the Topping:

  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • Fresh strawberries for garnish
  • White chocolate shavings for garnish (optional)

Directions:

1️⃣ Preheat the Oven:

Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan.

2️⃣ Make the Crust:

In a mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.

Press the mixture firmly into the bottom of the prepared springform pan. Bake for 8-10 minutes until lightly golden. Remove from the oven and let it cool.

3️⃣ Prepare the Cheesecake Filling:

In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the melted white chocolate and granulated sugar, mixing until well combined.

Add the vanilla extract and mix in the eggs, one at a time, until just combined. Be careful not to overmix.

Gently fold in the pureed strawberries until evenly distributed.

4️⃣ Pour and Bake:

Pour the cheesecake filling over the cooled crust. Smooth the top with a spatula.

Bake in the preheated oven for 55-65 minutes, or until the edges are set but the center is slightly jiggly. Turn off the oven, crack the oven door, and let the cheesecake cool in the oven for about 1 hour to prevent cracking.

Remove the cheesecake from the oven and let it cool completely at room temperature. Once cooled, refrigerate for at least 4 hours, preferably overnight.

6️⃣ Prepare the Topping:

In a mixing bowl, whip the heavy cream and powdered sugar until stiff peaks form.

7️⃣ Assemble and Serve:

Once the cheesecake is chilled, spread the whipped cream over the top. Garnish with fresh strawberries and white chocolate shavings if desired.
