Pink Velvet Cake Roll
This recipe gives you a soft, fluffy cake with a creamy, slightly tangy filling — perfect for Valentine’s Day, birthdays, or any pink-themed celebration!
Ingredients

- 3 large eggs
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/2 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup unsweetened cocoa powder
- Red food coloring (gel preferred for a vibrant pink)
- Powdered sugar (for dusting towel)

- 8 ounces cream cheese, softened
- 1/2 cup unsalted butter, softened
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
- Pink food coloring (optional)
- For Decoration
- Pink sprinkles or cake crumbs
Instructions
Step 1: Bake the Cake Roll
1. Preheat oven to 375°F (190°C). Line a 10x15-inch jelly roll pan with parchment paper, leaving an overhang on the edges. Grease lightly.
2. In a large bowl, beat together eggs, sugar, and vanilla extract until pale, thick, and fluffy (about 3–4 minutes).
3. In another bowl, whisk flour, baking powder, salt, and cocoa powder.
4. Gently fold dry ingredients into the egg mixture.
5. Add red food coloring until you achieve a vibrant pink shade.
6. Spread batter evenly in the pan and smooth the top.
7. Bake for 12–15 minutes, or until the cake springs back when touched.
Step 2: Roll the Cake
1. Lay a clean kitchen towel on a flat surface and dust generously with powdered sugar.
2. Immediately invert the hot cake onto the towel. Peel away the parchment.
3. Starting at the short end, roll up the cake with the towel inside.
4. Cool completely on a wire rack.
Step 3: Make the Filling
1. Beat cream cheese and butter until smooth.
2. Gradually mix in powdered sugar until creamy.
3. Add vanilla extract and, if desired, a few drops of pink food coloring.
Step 4: Assemble
1. Gently unroll the cooled cake.
2. Spread filling evenly across the cake surface.
3. Re-roll the cake (without the towel). Trim ends for a neat look.
4. If desired, frost the outside lightly with leftover filling or simple buttercream.
5. Decorate with pink sprinkles or cake crumbs.
6. Chill for at least 1 hour before slicing and serving.
