Basque Burnt Cheesecake
Ingredients:
- 2 cups (450g) cream cheese, room temperature
- 1 cup (200g) granulated sugar
- 4 large eggs
- 1 1/2 cups (360ml) heavy cream
- 1/4 cup (30g) all-purpose flour
- 1 tsp vanilla extract
- 1/4 tsp salt
Instructions:
Prepare the oven and pan:
Preheat oven to 400°F (200°C).
Line a 9-inch (23cm) springform pan with parchment paper, ensuring the paper comes up above the edges.
Make the batter:
In a large bowl, beat cream cheese and sugar until smooth and creamy.
Add eggs one at a time, mixing well after each.
Pour in heavy cream and vanilla extract, mix until smooth.
Sift in flour and salt, gently folding to combine.
Bake the cheesecake:
Pour batter into the prepared pan.
Bake for 50–60 minutes, until the top is deeply golden brown and slightly cracked. The center should still be soft.
Cool:
Let the cheesecake cool to room temperature, then refrigerate for at least 2 hours (optional, but helps slice neatly).
Serve:
Remove from pan, slice, and enjoy the creamy, slightly caramelized texture.
