Strawberry Lemonade Cake ππ
Ingredients:
- For the Cake:
- 1 box lemon cake mix (plus ingredients per package instructions)
- 1 cup fresh strawberries (chopped)
- 1 tbsp lemon zest
- For the Frosting:
- 8 oz cream cheese (softened)
- ½ cup butter (softened)
- 4 cups powdered sugar
- 2 tbsp fresh lemon juice
- 1 tbsp lemon zest
- 1 cup fresh strawberries (sliced, for garnish)
Instructions:
Prepare the Cake: Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans. Prepare the lemon cake mix according to package instructions. Fold in chopped strawberries and lemon zest.
Bake: Divide the batter between the cake pans and bake for 25-30 minutes, or until a toothpick inserted comes out clean. Let the cakes cool completely.
Make the Frosting: In a large bowl, beat softened cream cheese and butter until smooth. Gradually add powdered sugar, lemon juice, and lemon zest. Beat until light and fluffy.
Assemble the Cake: Once cooled, spread a layer of frosting on one cake layer, then place the second layer on top. Frost the entire cake with the remaining cream cheese frosting.
Garnish: Decorate with fresh strawberry slices on top and refrigerate for at least 1 hour before serving.
Notes:
For extra flavor, add a drizzle of strawberry sauce over the top.
