White Chocolate Strawberry Cheesecake ππ°
Ingredients:
- 1 ½ cups graham cracker crumbs
- ¼ cup granulated sugar
- 6 tbsp unsalted butter, melted
- 12 oz white chocolate, chopped
- 3 (8 oz) packages cream cheese, softened
- ¾ cup granulated sugar
- 2 tsp vanilla extract
- 3 large eggs
- 1 cup heavy cream
- 2 cups fresh strawberries, hulled and sliced
- 2 tbsp powdered sugar (for strawberries)
Instructions:
Preheat your oven to 325°F (165°C). Grease a 9-inch springform pan and line the bottom with parchment paper.In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Press the mixture firmly into the bottom of the prepared pan to form the crust.
Duration: 3 minutes
Bake the crust in the preheated oven for 10 minutes, then remove and set aside to cool. π
Duration: 10 minutes
In a heatproof bowl, melt the white chocolate in the microwave in 30-second intervals, stirring until smooth. Set aside to cool slightly.
Duration: 3 minutes
In a large mixing bowl, beat the cream cheese and sugar together until smooth and creamy. Add the melted white chocolate and vanilla extract, and mix until combined.
Duration: 5 minutes
Add the eggs one at a time, beating well after each addition. Then, add the heavy cream and mix until the batter is smooth and creamy.
Duration: 4 minutes
Pour the cheesecake filling into the prepared crust and smooth the top. Bake for 50-60 minutes, or until the center is set but still slightly jiggly.

Let the cheesecake cool to room temperature, then refrigerate for at least 4 hours, or overnight, to set.

Before serving, toss the sliced strawberries with powdered sugar and arrange them on top of the cheesecake.
