White Cake Recipe
Ingredients (Cake)
- All-purpose flour – 2½ cups (313g)
- Egg whites – 6 large
- Whole milk – 1 cup (240ml)
- Unsalted butter – 1 cup (226g), room temperature
- Granulated sugar – 1¾ cups (350g)
- Baking powder – 1 tbsp
- Vanilla extract – 2 tsp
- Salt – ¼ tsp
Instructions
Preheat your oven to 175°C (350°F). Grease and line three 8-inch (20cm) round cake pans.
In a medium bowl, whisk together the flour, baking powder, and salt. In another bowl, combine the egg whites and milk; mix lightly with a fork.
In a large mixing bowl, cream the butter and sugar together on medium speed until light and fluffy. Add the vanilla extract and beat until combined.
Add the flour mixture in three additions, alternating with the egg white mixture. Start and end with the dry ingredients. Mix just until combined after each addition.
Divide the batter evenly among the prepared pans. Smooth the tops and bake for 25–30 minutes or until a toothpick inserted in the center comes out clean.
Let the cakes cool in the pans for 10 minutes, then turn out onto a wire rack to cool completely.
✅ Bright White Vanilla Buttercream Frosting
Ingredients
White vegetable shortening – 1 cup (200g) (for snow-white color; substitute for all or part of the butter)
Unsalted butter – ½ cup (113g), or use all shortening for pure white
Icing sugar (powdered sugar) – 5 cups (600g), sifted
Clear vanilla extract – 2 tsp (regular vanilla is brown and can tint the frosting)
Milk or water – 2–3 tbsp (30–45ml), as needed
Pinch of salt or ¼ tsp white vinegar (to cut sweetness)
Instructions
Cream the shortening (and butter, if using) on high speed for 3–5 minutes until very pale and fluffy. Add the sifted icing sugar gradually, beating well between each addition.
Pour in the clear vanilla and a tablespoon of milk or water at a time until smooth and spreadable. Beat for another 2–3 minutes to make it extra fluffy and white.
For a super bright frosting, some decorators also add a tiny drop of purple gel color to neutralize any yellow. (Optional tip!)
If you're baking for a wedding or using this for photography, using all shortening + clear vanilla gives the whitest possible result.
