Mint Chocolate Fudge Cheesecake Cake

Ingredients:

  • For the Chocolate Fudge Cake Layers:

  • 2 cups all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 2 cups granulated sugar
  • 1 teaspoon baking powder
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water

  • For the Mint Cheesecake Layer:

  • 16 ounces cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/2 cup sour cream
  • 1/4 cup all-purpose flour
  • 1 teaspoon peppermint extract
  • Green food coloring (optional)

  • For the Mint Chocolate Fudge Frosting:

  • 1 cup unsalted butter, softened
  • 1 and 1/2 cups unsweetened cocoa powder
  • 5 cups powdered sugar
  • 2/3 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon peppermint extract

Instructions:

Prepare the Chocolate Fudge Cake Layers:

Preheat oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.

In a large bowl, sift together flour, cocoa powder, sugar, baking powder, baking soda, and salt.

Add eggs, milk, oil, and vanilla extract; beat on medium speed for 2 minutes.

Stir in boiling water until the batter is well combined (it will be thin).

Pour batter evenly into prepared pans.

Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.

Cool in pans for 10 minutes, then remove from pans and cool completely on wire racks.

Prepare the Mint Cheesecake Layer:

Preheat oven to 325°F (160°C). Grease and line a 9-inch round cake pan with parchment paper.

In a large bowl, beat cream cheese and sugar until smooth.

Add eggs one at a time, beating well after each addition.

Mix in sour cream, flour, peppermint extract, and green food coloring (if using) until smooth and well combined.

Pour mixture into prepared pan and smooth the top.

Bake for 40 to 45 minutes, or until the center is set.

Cool completely in the pan on a wire rack, then refrigerate until firm.

Prepare the Mint Chocolate Fudge Frosting:

In a large bowl, beat butter until creamy.

Add cocoa powder and powdered sugar, alternating with milk, beating until smooth
