Mini Cinnamon Sugar Cheesecake Bites Recipe

Ingredients

  • For the Crust:

  • 1 cup graham cracker crumbs
  • 2 tablespoons granulated sugar
  • 1/4 teaspoon ground cinnamon
  • 4 tablespoons unsalted butter, melted

  • For the Cheesecake Filling:

  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup sour cream

  • For the Cinnamon Sugar Topping:

  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 2 tablespoons unsalted butter, melted

Instructions

Prepare the Crust:

Preheat your oven to 325°F (163°C). Line a mini muffin tin with paper liners or grease it well.

In a medium bowl, combine the graham cracker crumbs, sugar, ground cinnamon, and melted butter. Mix until the crumbs are evenly coated.

Press about a teaspoon of the mixture into the bottom of each mini muffin cup to form the crust.

Prepare the Cheesecake Filling:

In a large bowl, beat the softened cream cheese and sugar together until smooth and creamy.

Add the eggs one at a time, mixing well after each addition.

Stir in the vanilla extract and sour cream until fully incorporated.

Spoon the cheesecake mixture over the prepared crusts, filling each cup nearly to the top.

Bake the Cheesecake Bites:

Bake the cheesecake bites at 325°F (163°C) for 15-18 minutes, or until the centers are set.

Remove from the oven and allow the cheesecake bites to cool in the pan for 10 minutes.

Transfer to a wire rack to cool completely, then refrigerate for at least 2 hours or until chilled.

Prepare the Cinnamon Sugar Topping:

In a small bowl, mix together the granulated sugar and ground cinnamon.

Brush the tops of the chilled cheesecake bites with the melted butter.

Sprinkle the cinnamon sugar mixture generously over each cheesecake bite.
