Cheesy pasta with mushrooms


Ingredients:

  • 8 oz. pasta (such as penne or fusilli)
  • 2 tbsp. olive oil
  • 8 oz. mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Chopped fresh parsley, for garnish (optional)

Instructions:

Cook the pasta according to package instructions until al dente. Drain and set aside.

While the pasta is cooking, heat the olive oil in a large skillet over medium-high heat.
Add the mushrooms to the skillet and cook, stirring occasionally, until they release their moisture and start to brown, about 5-7 minutes.

Add the garlic to the skillet and cook for another minute or so, until fragrant.
Reduce the heat to medium-low and pour the heavy cream into the skillet. Stir to combine with the mushrooms and garlic.
Add the grated Parmesan cheese to the skillet and stir until it has melted and the sauce is smooth.

Season the sauce with salt and pepper to taste. Add the cooked pasta to the skillet and toss until it is coated in the cheesy mushroom sauce.
Serve the pasta hot, garnished with chopped fresh parsley if desired.

Thai chicken curry

Ingredients:

  • 1 lb. boneless, skinless chicken breast or thighs, cut into bite-sized pieces
  • 1 tbsp. vegetable oil
  • 2 tbsp. Thai red curry paste
  • 1 can (14 oz.) coconut milk
  • 1 cup chicken broth
  • 2 tbsp. fish sauce
  • 1 tbsp. brown sugar
  • 1 red bell pepper, seeded and sliced
  • 1 yellow onion, sliced
  • 1 cup sliced bamboo shoots (optional)
  • Juice of 1 lime
  • Salt, to taste
  • Chopped fresh cilantro, for garnish (optional)

Instructions:

Heat the vegetable oil in a large saucepan or wok over medium-high heat.
Add the Thai red curry paste to the pan and stir-fry for 1-2 minutes, until fragrant.
Add the chicken pieces to the pan and stir-fry for 3-4 minutes, until browned on all sides.

Add the coconut milk, chicken broth, fish sauce, and brown sugar to the pan. Stir to combine.

Add the sliced red bell pepper, yellow onion, and sliced bamboo shoots (if using) to the pan. Stir to combine.

Bring the mixture to a simmer and let it cook for 10-15 minutes, stirring occasionally until the chicken is cooked and the vegetables are tender. Add the lime juice to the pan and stir to combine

Taste the curry and add salt if necessary
Serve the Thai chicken curry hot, garnished with chopped fresh cilantro if desired. Serve with steamed rice or noodles.
